So tomorrow a I have 2 bonless butts I am going to smoke.
I slathered & injected them with this...
And after they looked like this...
So now it is off to bed and let them rest in the fridge overnight. I am also doing a case (13 slabs) of Baby Backs.

Looks like the same stuff some of the hispanic ladies at our church cooked some chicken legs in the other day. That stuff is HOT

Ok 190 and I am taking them off, and foiling for 1 hour. Then we pull it with the ROMAN Pork Puller!

So here is the finished result...
Here I am getting ready with the ROMAN Pork Puller
Action Shot!!!
And the verdict....My 2 year old loved it!!!!
I loved the ROMAN Pork Puller. I pulled 2 butts in less than 1 minute. No burnt hands, no grease up to my elbows.
As far as the Achiote goes, this is the 2nd time I have done butts this way and it does'nt do much. I used alot, ALOT and I thought it would be very flavorfull, but it was just ok. I truly thing my regular rub ends up with a better product. But, it was fun, and a bad day by the smoker is better than a good day at the office!!!
