A few folks have asked for additions to the Catering Planner.

If you have any thoughts about things that you'd like to see added, meats, sides, breads etc. please post on this thread and I'll see what we can fit on.

The whole thing is based on Costco and Sam's Club purchases for the most part, so that the average Joe knows that he can buy what's on it and from a National chain, even though at a regional or local price!

Suggestions from caterers, restauranters, wannabes are all welcome!

I've never catered tri-tip, so that would be a nice addition.

How about whole hog?

Basic yield is 30-35% with some variations due to cooking method.

For a two meat meal, I usually go with 1 pound uncooked weight per person, then add 10 pounds or so as a safety per 100 guests (or bring an extra butt or two).
