Well this is my first BBQ adventure in about 6 months and my family, friends and I are ready. I have everything ready to go except for the Brisket, which arrived late last night.
I will be firing up bessy shortly to get the Ribs and Brisket going with a blend of Lump, Cherry, and Mesquite. Then a little later I will fire Betty up to throw some smoke to the Chicken with Apple then finish them on the grill with some sauce. Last night I did 2 large AHI Tuna Steaks spread with herbs and spices on a cedar plank to chop up for seafood salad.
Anyway here is what is happening today.... I will post the my rubs a bit later, as I'm pressed for time.
The Feast all laid out.
Some Spares I trimmed and the trimmings de-boned.
Five chickens quartered along with some wings for snacking.
New York strips hit with my steak crust.
Brats sitting in beer and onions.
I'll be sure to update, and I hope everybody and a good 4th.

I can't bear to watch because he makes me so hungry. I have learned this from his previous posts. But I can't look away either because it is just irresistable!

Thanks Guy's it's great to be Q'in again. The mission was a complete success, but I have to work on my pic skills again.... the wings were devoured before I could take a pic and by the time the steaks were done (12 Heineken's later) we just started chowing and I forgot to take one.
BUT I did get to snap some of the Ribs, Chicken, and Brats. The Grilled Ahi Tuna salad was excellent aswell, I will put that recipe up in the "sides" section along with the rubs I used on my Ribs Chicken and Steaks.
Anyway here is some pics of the final product.
The ribs freshly hit with sauce for the last 30 mins.
Ribs ready to eat.
The Chicken fresh out of the smoke, and the brats.
Chicken all sauced up ready for the pickin.
The chicken on the righthas a sauce I have been working on.. Buffalo BBQ Sauce. ( I will also post that recipe.)
I had to late of a start to get the brisket on but it is ready and waiting for me.

Looks awesome!! Great Idea on the brats, I guess Im slow I never cooked them with the onions on them,I always served them with it. do you boil in beer or just soak? and to pierce or not to pierce the casing? That is my question? _________________ life is too short to be in a hurry Slow down and enjoy the ride! |

kickassbbq: 75 people will definitely keep your hands full, but as long as you enjoyed it...... rock on. Getting paid doesn't hurt either.
roxy: Thanks, it feels good to be running bessy again, although I am thinking of upgrading for more space. We were supposed to have about 18 people but ended up with 10 so I have plenty of BBQ for lunch this week. No Complaints...
Alien BBQ: Thanks Alien, it good be out and about, Up at the lake house in Caseville MI there is a 2 week bash called "Cheeseburger Festival", this year I will be cooking my Buffalo Portabella Burgers as a vendor downtown and I think we are going to take on a big hog for the party at the house. Can't wait for that, but I need to re-hone my skills and get my Q'in legs back.
allsmokenofire: Thanks, I wish i would have snapped some shots of the NY Strips... it was like a red meat orgy.
GOON'S D: I will be posting the recipes for all my rubs and sauces in the "recipe" section here, give them a try and let me know what you think.
Doc1680: Nice to see you around still, did you ever get you rub adventure off the ground? As for me Backyard Rubs has been put on the back burner, I have way to much to handle right now, trying to run my company plus the addition to the family leaves me with absolutely no time. But like I said above, check out the Recipe section(soon) for my recipes and give them a try, I still would like to hear any input.
mding38926: it's good to see you, hope all is well with your family and your Q'in skills.
troystr68: I have done this a couple times now and they come out great, once I also tossed in some red an green peppers and they turned out great. I just give them one poke with a fork and let them sleep over night in a pan with some beer and a little Kosher salt. They turn out great.

Things are going great thanks...........sitting here in upstate Ny on vacation with the parents and in-laws (like 45 minutes from one another)..........the negative of course is that I am about 2 hours from que..........so I am definitely jonesing to get back to VA..........I am thinking the weekend of the 15th will definitely be one filled with que. _________________ Dinger |

I had to put the full blown marketing on hold also. Got a promotion at work, so things got hectic with my work load. That's o.k. though. I'ts given me time to tweek everything. _________________ Love the voodoo that Q do.
