I know I am not the only one that has made fun of liquid smoke on several occasions. However, things have changed in my corner and maybe I can help you change your mind about this concoction.

See... I always thought liquid smoke was a mixture of... well... something that they called liquid smoke. Now I am not sure exactly how they make thiers but after watching a show on the Food network that reminded me of a process that we used as a kid I plan on doing this again myself.

Make your own pure liquid smoke.
Thanks to Alton Brown and some fragments of my own memory here is the process to make your very own liquid smoke.

Start with one of those fire pits made of clay with the tall chimney sort of thing. I forget what they are called and a quick scan of walmart diddnt help but that was the last poklace I remember seeing them.
Point is you want a chimney approx 3-5 feet tall.
Start a fire of hard woods in the firebox.
On top of the chimney place a BUNT cake pan. The type of round pan with a hole in the center.
on top of that place a pie place large enouph to completely cover the bunt pan.
in the pie plate place a large ziploc baggie full of ice.

The principal of this design is the fire causes smoke which travels up the chimney though the hole in the bunt pan. hits the cold pie plate and condenses into a liquid which is collected in the bundt pan.

After a load or three you will have a few tablespoons of real and pure liquid smoke you can be proud of.

Different woods will result in different flavors of Liquid.

Try it and have fun.

if you try this report back here with your results and combinations of wood as a lot of this is from memory and what I saw Alton do on tv.
