So whos sending up a smoke signal this weekend and what ya smokin.

Got great weather today and I am heading out to fire up the smokerette. I will be doing 4 racks of BB's and some beef braising short ribs.

I was up at 4:30 this morning getting the fire going. At 5am a 4lb brisket flat and a 7 lb butt went on.

Through a couple of chuck roasts on. They stalled at about 165 just like a butt. This is my first venture into the world of beef. I hope this comes out o.k. I don't have a back-up. I knew I should have put that slab on too. Idea

I did a turkey for a sort of first time in the new ECB to try it out. ANd since we already ahd a little turkey in the freezer I didnt have to go buy something.....other than a bag of charcoal and hickory chunks, and a big aluminum pan so I didnt ruin the sidewalk/porch.

Went pretty well all things considered. I need to adjust the rub a tad.

Well I'm 16 hrs into my 7 lb pork butt. It's right around 185 and slowly climbing, I think I'll pull it off when it hits 200.

I actually skipped out on smoking this weekend and threw together the new Brinkmann Professional Dual Zone Charcoal Grill (the same model SIC uses).........and put the gas grill into moth balls (lol....the wife is finding someone to give it to)................so needless to say the weekend was spend seasoning the grill and then went for a nice top round sirloin steak and some chicken breasts............loved the simplicity of using my gas grill.....but man oh man did the charcoal taste better in my opinion.

Gonna have to get back to smoking next weekend though.

Didn't smoke anything this weekend, but I did grill some leg quarters in my Meco Walkabout pit. I hadn't used that thing in quite a while. I also forgot how much I missed charcoal grilled chicken.
