I'm opening a small BBQ restaurant and wanted to get some opinions on the best way to store and reheat whole pork butts and briskets that have been smoked but not used. I want to keep them as moist as possible. Thanks for any help you can give.

I would think that you could get away with pulling everything and placing it into those big stainless trays...then store the trays in the cooler...then put the tray that you need in a steamtable to reheat...try and keep it covered and portion out of that. should keep things good for at least 1 day. Also you might try staggering the cooking of the meat and then hold some of the whole butts in a warming oven at 140...they should be able to stay in there for a while...

The BigJim Man,
If you KNOW you are going to have some meat to keep, try and smoke it in aluminum pans so you can catch ALL the juices. That way you can just put that pan in the fridge and reheat it in that pan. The juices from that Butt a smokin' will still be there and it will be as moist as when you took it off the smoker.
May not be the best way, but it is how I do it. You can't tell the difference 2-3 days after smoking and reheating.

Do ypu think i should store them whole or pull them and them store them as DawgPhan suggested? I like the idea of saving the natural jucies to keep the meat moist.

Ok So you think they should be pulled and then stored. Then reheated in a steam type of pan with the juice from the meat.

I reheat mine in a aluminum disposable pan in my smoker too.
When I bring in leftovers to work I place it in a crock pot to warm up.
Turns out great.
