Today, I'm doing a whole chicken with a homemade dry rub that I have cleverly named "Burbs Dry Rub", which consists of the following;
4 Tablespoons Brown Sugar
4 Tablespoons Sea Salt
1 Tablespoon Freshly Ground All Spice
2 Teaspoons Cayenne Pepper
1 Teaspoon Meditteranean Bay Leaves
2 Teaspoons Garlic Powder
2 Teaspoons Onion Powder
1 Teaspoon Coriander
2 Tablespoons Freshly Grounded Thyme (should be powder)
1 Teaspoon Paprika
This is my first time ever creating my own rub and using it, so I have no clue how it will work out.....but it smells great!

The Bird has been rubbed!
I'm going to let this baby sit for the rest of the day and then I'm either going to smoke it or grill it. I'll have more pics later.

Looks good Burbs. The chicken and the rub.

Enjoy your bird! |

I put inside the bird and then rub it all over. I usually brush olive oil on it, but I forgot and had to spray the oil on afterwards. _________________ "Don't let yourself get attached to anything you are not willing to walk out on in 30 seconds flat if you feel the heat around the corner."

Yep. You got some good flavors going on Burbs. You'll have some sweetness too. Which isn't a bad thing for chicken. Maybe play it up with a citrus glaze. _________________ Love the voodoo that Q do.

Well the bird is done and has been devoured and WOW! I love the dry rub that I made this morning. Perfect blend of sweetness and heat. I gotta "toot my own horn" and say this is my best whole chicken yet and I finally created a rub of my own.
Grill set for indirect heat
Apple wood chunks
Apple wood smoking
Bird on the grill
Finished product

Looks great! Gotta question tho.. Why only one bird? I'd of had to cook at least one more since I had the fire going... _________________

The skin was perfect, as I like a little crunch. The rest of the bird was very tender

It's only my wife and I, and we don't eat a whole lot, so I didn't want to have any leftovers spoil. I prefer fresh chicken, oppose to it sitting in the fridge a couple days, as I always end up throwing it out. We had a lot of chicken left, so made some burritos and froze them for later.
Thank you all for the kind comments.
