One more holiday where I wasn't going to cook.

But my cousin wanted ribs for the family gathering on Sunday and I had promised a friend some of my smoked chicken salad so I did that today.

Sunday was a beautiful day to fire up the ProQs



Ribs and tips on the E20.


Ribs done. Tips done and chopped.






I decided to do some ABT's on the Frontier as well.



Packed up and ready to roll.


I forgot to take my camera with me so no, "people happily eating Q" pics. We had a blast though. Plenty of food and Jack. Very Happy



Monday brought chicken. A couple of split breasts and some thighs. Since I was cooking some anyway I threw some on for tonights dinner. I fired up the E20. No water pan w/ RO lump and maple.


Looks about ready to come off.



And the chicken salad.

Not a bad weekend. Good food. Family, friends, and Monday off! Very Happy I love it.

Doc1680, first Ribs then ABTs and then Chicken and Chicken salad. Very Happy Everything looked awesome your Ribs looked outstanding and the Chicken looked delicious. And I can only imagine some wheat bread and that Chicken salad. Very Happy

Nice job Doc,those ribs look fantastic,not that there is anything wrong with the abt's and chicken,it all looks great.

Those chickens look gorgeous.

Any dressing on the salad, or do you just toss the chicken into the veg?

After I got to my cousin's I ended up doing his chicken to. I'm a sucker for a hot grill or smoker.

I don't do alot of chicken. It was my first time cooking the chicken on the tops rack with no waterpan. I like it better. I'll have to adopt this for my comps.

Here's the recipe. It's really basic.

3 or 4 boneless chicken breast
4 or 5 thighs
1lb of grapes (green or red, or both)
11/2 c. chopped walnuts or pecans
2c. chopped celery
2tsp. curry powder
salt & pepper to taste
sugar to taste
Mix everything together with the mayonaise of your choice (I like the tangy zip stuff), not too much that it's runny.


My friend loved the smoked version better than the baked I usaually do for her.
