Here is my take on the Italian clams casino. They are very tasty


30 littleneck clams

For the butter sauce:

3/4 cup white wine
4 medium shallots, chopped fine
4 Tbls heavy cream
1 1/2 cup unsalted butter, cut into cubes
2 Tbls lemon juice
Salt and fresh ground black pepper, to taste
10 strips of smoked bacon, diced into 1/2-inch pieces
1/2 cup white onion, diced into 1/2-inch pieces
1/2 cup green pepper, diced into 1/2-inch pieces
8 tsp Panko breadcrumbs


To make the butter sauce: In a saucepan, combine the white wine and shallots. Place on medium heat and bring to a boil. Let simmer until the liquid is reduced and the pan is almost dry, about 10 minutes.
Add the cream and bring to a boil (be careful not to scorch). When the cream looks thick and buttery, lower the heat. Add the butter, a piece at a time, stirring constantly until all the butter is incorporated.

Remove from the heat. Season with the lemon juice, salt and pepper. Set aside.

In a saute pan, cook the bacon over medium heat until halfway cooked, and then add the onion and pepper. Continue to saute until the vegetables are soft. Allow to cool slightly and add to the butter mixture. Let the sauce cool to room temperature.

Preheat a grill. Grill the clams until they open. Spoon butter sauce on top of each one let go for another 2 mins and eat.

Ah, SIC is back!
Some of us thought you had "clamed-up" for good....sorry Wink
Great looking recipe, on the Panko bread crumbs, it's one of those things I never think about when I go to the store. I once used smashed-up Italian croutons as a substitute. It seemed to work-out, from what I remember.

LOL, Thanks weldon everything is very well, I hope the same is true for you. I know your waiting like a kid for that new Q.


Panko is one of those things you normally don't think of buying, but it really is great. I use it very often in breading and binding, it turns out very light and crunchy.
