I'm looking for a tried and true recipe for good smoked Corned Beef. Primarily looking at the CB's you buy at your local store for St. Patty's Day. Not sure on what to do...smoke to use...length of time...temps, etc. We will be attending a St Patty's Day event on the 17th, so I want to have some Smoked CB this weekend instead Smile

Smoked corned beef is basically pastrami. The way I do them is to trim down any external fat to around 1/4". Soak the corned beef in water(in the fridge) for 24 hrs., changing the water twice during the soak(after 8 hrs. and again after 16). Remove the corned beef from the water and pat dry. Coat the corned beef with freshly cracked black pepper. Smoke at 230-250ish w/ your favorite wood(I like oak or pecan) until internal temp hits 165ish. Let it rest under a foil tent for 45-60 mins, or until cool enough to handle. Slice very thin( a deli slicer works great) against the grain.

Not a big fan on the Corned Beef, but I have done it a few times. I usually just brine a brisket and smoke it as above mentioned. I catch briskets when they are on sale for under $1 and stock up the freezer, so it is cheaper and I can control my flavors vrs those preseasoned corned beef things. The recipe zaar has a good base brine and recipe. Again, go with the smoking versus the oven.
