Thinking about smoking a brisket this weekend for the Superbowl. But if I get a 10 pounder or so, I will probably have to put it on the night before, would that be correct??
What temp and time do you guys usually think works for a brisket.
I was planning on 225 degrees, time I'm not sure though.

I am just a backyard guy. I would figure 1 hour to 1 1/2 hours per pound.
225 sounds good to me. Take the internal temp to 195 and it will be perfect.

i do mine (in a gasser) at 250 degrees for about 8 hours ,or untin i can push a quick read thermometer through the middle of the brisket ,with very little force. hope this helps ....

About 1 hour a lb. at 225, foil the meat at an internal temp of about 160, finish at meat temp of 200.

Make sure to let the meat rest a while.
