Hello All~
Well, my first attempt with the new smoker came out fair to partly middelin' I marinated the wings in Stubbs wing sauce overnight. I kept the temp between 200 and 220 for 3 hours, but the wings needed about 45 minutes more. It was near 60 outside, so I'm not sure why it took an hour longer Also, in the last 45 mins, the wings nearest the heat source burned the outside and dried the inside.
Any suggestions?

well kilt the wings that didn't burn look good so where in the cooker did you cook you wings, where they to close to the firebox? next time try to place them as far away from the firebox as you can so you won't scorch this is what I do I'll smoke em for approx 35 min and then deep fry and then sauce em crispy and smokey

You could rotate them around so the ones on the end don't get burned

Besides the couple that got a little to close to the fire box,the rest look great.

Yep. Beside the real crispy ones they look good. I do as Markbb does. Smoke them for about 30-40 mins then into the fryer to finish.

Do the wings still have a nice smoke taste after comming out of the fryer,I never thought of trying them that way.

Another Idea would be to take the heat higher, And move the wings farther away from the source. Like about 275-300

i have never had luck with wings on the que.i do them in the oven.

(im gonna get reamed for that statement.) Wink

My lovely bride likes them better when I smoke them in the Weber Kettle (boooo) Gotta keep the ladies happy, right!! Laughing
In the oven, try the Stubbs marinade and follow the direction on the bottle. they are exceptional

I always put my wings in a foil pan to go in the smoker. Drizzle them all in VOO, sprinkle on the rub, and cook away. They still soak up the smoke & they don't burn up. Best wings I've ever made. Wing juice optional as you eat.
