Hey fellas, I'm in a quandry here. I have recently had several request to sell my pork shoulders to the customers whole. ie not shredded. how much do I charge? should I charge by the pound or a flat rate? any advice would be helpful because the people are waiting for me to deliver. By the way I do the butts and not the whole shoulder. and the butts usually take between 10-12 hours. I was thinking about charging $30-$40 per butt is that about right or am I way off base.

Its about 10 bucks a pound here for pulled pork orchopped brisket.....I wouldnt give much of a break on them whole. How many can you smoke at one time?

If you have an 8lb butt, it will probably reduce by 50% (or more depending on fat) 4 pounds for 40 bucks would be $10 bucks a pound, like krazy said. does that cover your costs/

Are you in this to make money?

If so, most caterers I know use the rule of 3 I think it's called. Take your cost and triple it.

You have to figure your costs (wood, electricity, time, rub, meat, etc) and then make a profit.

Sell it cheap and you'll be stuck on that price. Sell it for what you think you should make and let the word get out that you sell the bes stuff.

Make sure they're not wanting whole shoulders (maybe they have memories of the south) or maybe they don't know what a full shoulder looks like.

I would go with $10.00 a pound, minimum purchase of 10 pounds. Unless you have other people interested, it just isnt a money maker to cook one butt 12 hours, at a profit of $20.00! Shocked

I thank you guys for the advise I didnt know that they shrunk up that much during smoking. I feel like I am already stuck on a price I quoted for a couple people ($30) But my wife said $40 because of the amount of time involved. Im doing this not to make money per-say I wanted to start spreading the word about my sammies, and people (latinoes) requested the whole butt for their carnitas and tacos. And, people around here dont even know what a whole shoulder is let alone just the butt.
