I have been wanting to do some bacon wrapped Scallops on the smoker. Anybody done these and will the scallops get over-done before the bacon does?

Yes, the scallops will be done before the bacon. Try blanching the bacon in boiling water for about 5 to 7 minutes (depending on the thickness of your bacon), then wrap around the scallops, then smoke them. This should make sure your bacon is fully cooked first, just need to crisp it up. By the time the bacon is crisp, the scallops should be done.
