OK. Based on the info in the OP, you are cooking on a Lang 60. You should be able to get a 100lb hog on it, especially if it's head/feet off.

$2.79 is a little high for a pig/hog that size.

I agree with Harry. If you can, do a smaller pig and supplement with shoulders. I am doing a 100 pounder this weekend and throwing in 3 #10 butts.

I think you are low on your pricing and at 300.00 for labor you are short changing yourself. Don't forget you have to pick up the pig, prep the pig, cook the pig on site for hours and serve the pig. ...
