That has got to be a monster turkey Shocked . Brining it is the right idea but I'm not sure you have enough salt in your brine. I usually go 1 cup of kosher salt or 3/4 cup regular salt per gallon.

I use Rubbermaid Proserve...much cheaper than Cambro. I think Cambro will keep food hot/cold longer but if you only need a couple of hours, this works just the same.
