Butts are very forgiving when it comes to temps. I smoked a butt last weekend at 300 and it was done in about 6 hours. Nice bark, tender and juicy!

Jack the temp up to 250 and foil it. Cook it to about 195 foiled. Temp will climb fast while in foil.

Of the woods you mentioned, I use apple for ribs, chicken. Mesquite for beef and hickory for butts. I think mesquite smoke is too strong for pork, but that's my taste. I use a rub called Dino's and ...

I remove the butcher's paper, rub it, place it on the smoker, slap it for good luck, smoke it until the internal probe indicates its in the 190's. Then around 195ish I remove the probe and re-poke it ...
