The white smoke you speak of happens when rendered fat drops on the coals. If you put a diffuser in your UDS, the smoke will be thin blue to invisible for the entire cook.

Ok, as far as rub used, salt,pepper,garlic powder and onion powder, NO TQ.

The cooker is a Brinkman offet using mesquite splits, also weed burner to start it. He does cook hot but maybe not so fast ...

No curing salts added, and his smoke is not always thin blue but for the most part it is, I haven't seen a pit that produces thin blue for 10-12 straight, especially when refueling is involved.
