We had a great time and learned alot. We did get a callout for chicken, but the other 3 categories didn't go as well. Hopefully we will try to get at least one more comp this year and see how we do.

Its been a few hours and I am now at 112 degrees - I dropped my temp down to about 150-175. I can tell the temp is slowly creeping up.

The plan is to keep it low at this temp for as long as it take ...

My plan is to pull the meat around 135 degrees internal temp and foil and cooler until dinner is served.

Not sure if this matters but I do have the Prime Rib in a foil pan to catch all the juices.

Make sure you use at least a 2" ball valve for the drain. I skimped on my and used 1" and how I can't do much with it. Pay the money now and save problems later.
