Go for it! It will be heavy, but the meat won't know the difference. And that extra iron on the side wall will only help keep temps more consistant.

Smoking green chilis is awesome! I like to smoke them for a few hours, peel the skins and then use them to make green chili. The smoky flavor is IMHO a great addition to hot green chili.

Just keep in mind that stainless (especially smaller gauges) will warp and twist VERY easily with not that much heat. Make sure when you tack it in place to stagger the welds and be patient. ...
