Noonans True Value (just ask rantal) on Bruns Lane in Springfield has a smoker that will do what you need. Don't know what they charge though.

Well I cheated a bit and Par boiled them for about 7-8 Min. I did them that long because I was doing probably 7 lbs worth of potatos.

Most of the comps I have judged, teams usually turn in on bone meat on both sides but have had a few with two bone.
Those look pretty dark in that second picture. Did you put them over direct heat?
