I upped the mustard to 2/3 c. and I used minced chipotle peppers in adobo sauce in lieu of the Tabasco. It turned out fantastic. Thanks again, Roxy!

It's cool to leave it on. It will crisp up and you will get a few crunchy bits (though you might have to chop those parts) in the pulled meat.

Got up at 4:30, had the fire started by 4:45, and had the butts on about 5:30. Two 5+ lb butts from a local meat market ($1.20/lb.).
