My experience is mixed.

It works OK if you trim off as much silverskin as possible because it wraps around the shaft and jams agains ...

I had "Chicken Thumbs" at a Boston Chinese restaurant (maybe King Wah?) in the early 1970s.

They were similar, but real chicken breast, not "reformed".

Do you get lots of meat smoke when you use sand in the pan?
I don't like that as much as the clean taste of hardwood smoke.

I have Paul Kirk's Championship Barbeque book. He suggests several times if you want to add dry milk to a sausage recipe, make sure it's powdered, not granulated.
