For trimming it sounds like you trimmed to aggressively.

When you say blasted surface does this require the scaling to be removed or just roughed up?
Removing the mill scale and creating a profile is the only way to prevent paint failure.

Personally I have never used it for cooking grates but I see no reason why not. Give yourself about a 1/2" in between the bars and go for it. Very Happy
