The mustard just keeps the rub on the butt better it doesn't add any flavor. I never added mustard to a butt but go ahead give it a whirl.

That is a small packer. All cookers are different but on my
offset at 300 I would be 6-7 hrs.

Handles from shovels, axes, sledge hammers, & such that are (accidently) broken are usually ash, hickory, or maple.
Remove any sealer or finish...
