The mustard just keeps the rub on the butt better it doesn't add any flavor. I never added mustard to a butt but go ahead give it a whirl.

I too smoke year round in very cold temps. I wrap my smoker (WSM) in a wielding blanket. You can pick one up at Harbor Freight or similar store.
