You aren't going to crisp the skin at that low a temp, maybe not even at 275. If it were me, I'd stoke it up to at least 325 the last 30 minutes or so.

I've used green pecan with a charcoal bed. It gives a little more pungent flavor than dry. I don't like the creosote buildup inside the smoker though.

To be honest the UDS design is very fuel efficient. Other than making it very heavy I really don't see the need.
