Saute some mushrooms & onions, slice the beef very thin, throw everything in a Slow Cooker with some beef stock until tender. Serve over cooked egg noodles. (My daughters favorite)

I also cook my briskets & butts @ 300 - 325. I don't think I will ever go back to 14 hour cooks (consume too much beer Very Happy )
Ribs I cook at 250 - 275.

What worked for me was to use briquettes until I figured out how to maintain temps ...
