+1 on smoked without breading...I wrap mine in bacon, rub with brown sugar, and smoke for a couple of hours...full breakfast delight.

I've done deer jerky for a friend in the past. I suggest a commercial jerky mix/cure that is made for game meats. Helps eliminate the gamey taste.
