I did use apple wood. What I did was put a small baking pan directly over the flame. Soaked the apple wood chips and periodically placed wood into the pan. So maybe less wood at a clip? I will try tha ...

Well she's been at 225 250 consistently. Going on hour 12 and has been stalled at 164 for two hours. The wait continues.
