Mine temp stays more even when I use briquets as opposed to lump. Doesn't take much wood at all. Just two 1 1/2" splits does it.

I baked a sopapilla cheesecake on my offset for a dessert entry. Got first place. Shouldn't be too difficult on a Komado. Use a diffuser and watch your temp. Should be fine.
