I've brined beef ribs and they tasted great. I will do this again.

Pork ribs, I've had too much luck without brining. I won't try it unless someone comes out with a killer recipe..

i have an ECB and have used sand and water. Put my thermo down there and have not noticed a difference in temp or cooking time.

I will be using sand more often but with foil over the sand to catch ...

I have the ET-73 and love it. My only knock is that the on switch is inside the battery compartment and it's difficult to program. If it ever breaks I'll look at the weber and a couple others.

NO.

And you are in Dallas, so 6 months is as long as you will need to season green wood. Sometimes 3 months of summer weather is good.
