I occasionally pick up a bag of Ono Lump, which is made from Kiawe. I usually use it for grilling steaks. I like how it burns and it has a nice aroma.

Get a Thermapen and use one of the temp charts in say, Mastering the Grill for doneness. Works for me.

I used to soak but eventually found it didn't really add anything. Now all my wood (chunks, splits or chips) go in dry.

Hey boards, nice looking bird! By the way, if you are interested you can pick up a Smokenator for you Weber for about $75. It will help with longer smokes on the kettle like ribs or a butt.
