I own two of those bad boys myself. I use them just like a pizza stone. Preheat the cast iron in a grill or oven at around 450-500 degrees and you're good to go.

I always rub or marinade the wings overnight then cook indirectly at about 300 degrees for 1.5-2 hours. You could do that on the kettle and toss on a chunk of wood for smoke.
