UDS I use the charcoal basket with about 8 lit pieces.

the cabinet I use a torch on the tray of pellets. (cold smoke only)

I use the heavy duty version in the house and out next to the UDS. other than the occasional rib bone coming through (probably more user error) , that stuff is top notch.
