ok, been on for 12 hours. meat temp in the flat says 190* and in the point it reads 170*. im confused, so when do i pull? Stoker temp in the middle reads 178*

ok, cant remember which end is the piont! the thick end or the thin end?
What about that thick hard fat on the bottom? it doesnt look like it will break down

OK, picked up 50 lbsof BB ribs today for the cook on Sunday. So pull at 190* or just do the bend test?

I can get either of them. Oak is $230 a cord and Cherry is $155 a cord. Does that help?
