"Montreal Smoked Meat" is a landmark for Quebec. IIRC, its corned beef brisket sliced and served on a sammich. I think the difference between regular corned beef and MSM is the seasoning.

Get it off the ground, (pallets some 2x4's, anything) and it should be fine as long as it stays dry. The cold won't hurt it.
