My experience is stay away from the water. Call it a drip pan if it makes you feel better.

I only use water when I do turkeys on my WSM.

I never used one but I was debating the same one at acadamy and a WSM. I went with the WSM but I wanted the offset just as bad only problem was it was several hours away.

That is the source for air inlet. The covers on the tubes act as dampers. Less O2=lower temp, more O2= higher temp. That is how the temp is regulated.
