I have done this before and it has turned out wonderfully. I used olive oil because that's what I had on hand. I don't see how that'd be much different than vegetable oil though.
I wouldn't use boneless/skinless breasts and I also wouldn't pre-cook them. You shouldn't have a problem doing chicken BBQ as it is fast and easy regardless of how many people you're feeding.
I don't use foil but some of my friends do. They say that they do this because they don't want their butts to get dry. I think that this is the reason that most people do this.

I have tried both and see no difference in cooking time. While I've never purchased meat at Sam's I must say that I do prefer butts. For some reason they just taste a whole lot better to me.
