As a rule, Competition BBQ is rarely given to the general public. You usually have to know someone or try the Peoples Choice.

Best way is to take the judges class, pay the dues, and go judge.

Cook them both at the same time and don't worry about it. When one is done, pull double wrapped in foil, wrap in towel, put in cooler.

THe brisket will taste like brisket and the pork like pork.
