Yes, just make sure it's not directly below what you're smoking, in case of dripping. And I have to open all vents to get enough air for pellets to stay lit.

All of the grocery stores in my part I the state ( middle) have briskets. Mostly run around 3.29-3.49 here. I miss the 88 cents/lb they used to run.

Personally I probe the breast, and shoot for 165 there. Thigh should be more like 180, IMHO

I know most here don't, but I do. I make a weak beef broth, and mix in my rub. I inject this, not for moisture, but to spread the flavor of rub throughout butt while it's cooking.

Bugs, yes I leave them out at room temp. Tasted pretty good last night when I was bottling, we'll see how it is in a couple weeks. Think I'm gonna pull my plants this weekend, and dry the rest.
