Just make sure that you don't put it over direct flame. Use indirect heat and drop the temp. Low and slow. Once the bacon is cooked thru, put over the flame to crisp up at the end.

I've played in a few different towns and they all generally follow the ASA rules. Check out their site. I'm sure they can hook you up with everything you will need to set up your own league.
