I always use Kosher salt, doesn't matter which brand, although some have larger grinds than I want. I avoid iodized table salt like the plague.

Hope this turned out for you. I hope you pulled it before it went past 130 or so.

Never liked smoked tenderloin. Always grilled, or pan seared (steak au poivre).

I've found with tri-tip that 140 is the magic number for me. It seems like it needs to go past the 130 range to get the best bite, but still keeps some good pink inside.
