I tried the brisket, smoked @ 220 till 165F internal temp then double wrapped and finished in the oven till 200 and then let it rest in a cooler... still tough and dry Sad

I used the water pan filled with warm water when smoking a brisket. this time I could maintain a 200<->225 temp.
but damn... cleaning was so much easier with an empty pan.

I smoked a shoulder last week and had a really hard time keep the temps low, by low I mean < 250
I ended up smoking most of it 250<temp<275. And at some point it even spiked to 285.
