Your Propane consumption will vary based on your temps and times. I add some charcoal and then wood to my SPX 300 and use gas for backup on over night cooks.

You would need to contact your HD and ask them. A certain size maybe required based on what you're using under it and the type of appliance.

You may want to look at the Southern Pride SC 200 or the DH 65. Both have a nice capacity with a smaller foot print.

Depending on cost/prep/cook time for the other meat I think you'd be fine at $1-1.50 per additional meat per person. You wouldn't need to go all out with the first meat by offering two.
