Sounds like an over-the-top amount of sugar to me. Between the brown sugar, all the saucing, plus the spritzing with apple juice (more sugar). That could be what's resulting in the ham-like flavor. ...

I just wrap the each rack separately - no pan needed

Add a little apple juice to each rack wrap it up and put it right back in the smoker.

Unwrap to let the rack firm back up at about an hour ...

The brisket is tender, moist and has a great flavor. It broke up a little while slicing the flat portion, but I'll take that as a trade-off any day.
