To all who have cooked the wagyu briskets... What temp are you typically pulling them at? I normally go to 195-200 and then rest for an hour with a choice brisket from Sam's.

Last time I had food for vegetarians, I requested that they were served first. If everyone is agreeable, that usually works out.

Otherwise you may have to separate certain portions.
