I wouldn't use mesquite. It can be a bit overpowering on pork. Hickory or a fruitwood like apple would be a better choice..

You mentioned having 2" between the ashpan and the firebasket bottom. Another inch of clearance might help with airflow and temp control..

Last weekend cooked 2 nearly identical 8 lb butts. One took 12 hours to hit 200 internal temp, the other took nearly 4 hours longer! Must have been a tough old boar.. Very Happy
